Our Reserva is an ensemble of four grape varieties, which are very well adapted to the region: Cabernet Sauvignon, Merlot, Syrah and Nebbiolo. Resulting in a wine quite interesting and unique, deep red with very dark notes in the middle, the nose provides a range of complex aromas of dried fruit, spices and wood in perfect harmony, predominantly Sirah varietal aromas that enters the mouth soft and silky, sweet and well balanced on the palate giving everything it promises on the nose, being a perfect wine for the special moments in our lives.


TECHNICAL WINE


Varieties:

Cabernet Sauvignon 30%, Merlot 30%, Sirah 30%, Nebbiolo 10%


Vineyards:

Merlot: Floor creek in Guadalupe Valley vineyard 30 years old sandy loam soil settled on boulders. Alluvial origin.

Sirah: Arid Zone at San Antonio de las minas, 5 years vineyard, rocky soil.

Cabernet Sauvignon and Nebbiolo: Rancho Llano Colorado in San Vicente , vineyard with 15 year old clay soil.


Process

Variety fermented separately, with the following processes in common: handpicking, stripping and ground harvest, marinated 24 hrs at 15 ° C , fermented in stainless steel tanks at a controlled temperature between 20 and 28 ° C for 10 days post -fermentation maceration for 5 days, and aged 24 months in French oak barrels.

Winemaker's Notes:

Intense cherry red color, the nose shows aromas of wild berries, spicy and sweet, damp earth notes, woody notes in perfect balance with aromas that evoke cinnamon and snuff, in mouth soft, velvety, defined freshness appreciated that gives an extra touch of elegance, strong and possessing long final structure.


Suggested Pairing:

Serve with oil-based Mediterranean olive and black or green olives, grilled meat, meat sauteed in sauces, marinated, pasta, cheese, lamb and pork dishes.
